Dill is grown almost everywhere, but dill essence is produced mostly in the United States and Europe.
Extraction Method
Dill essence is obtained through steam distillation of the grains and the stalk of an annual grass with yellow flowers, native to the Orient.
Uses
Dill essence is used in all perfume manufacture applications: fougere, aromatic, chypre and spicy notes. It is also used to flavor fish dishes, salads, vinegars, sauces, liqueurs, and jellies.
History
For the Romans, it was a symbol of energy. The Greeks used it to cure hiccups. In the Middle Ages, dill was believed to protect against witchcraft, even though it was used in the making of magic potions. Medicinal properties Dill has sedative properties. It also facilitates digestion. In India, a bowl of digestive plants (anise, carvi, fennel, dill) is often presented at the end of a meal.
