Pepper is native to India. The main producers are India, Malaysia, Indonesia, Brazil and Madagascar. Pepper essence is mostly produced in India, Indonesia, Madagascar and Europe (France and Germany).
Extraction Method
Pepper essence is obtained through steam distillation of the ripe fruit. The spice is composed of black pepper (the whole fruit is picked before reaching complete maturity), white pepper (the pericarp is removed from the ripe fruit) and green pepper (the fruit is picked before maturity to prevent it from turning black.) Pink pepper comes from the schinus molle, a tree that grows in Central America, Brazil, and a few islands in the Indian Ocean. However, it is not considered real pepper. Other so-called pepper trees are grown in China.
Use
Pepper essence is used to alter fine perfumes.
History
Pepper has been the most used and most prized spice since the Ancient Times. When the Goths threatened to sack Rome in 408 B.C., they demanded pepper, gold and silver. The Creation of the of Company of the Indies by the French helped spread the use of pepper and put an end to the monopoly enjoyed until then by the Portuguese. Pepper was used until the 17th century for payment of taxes and rent. Medicinal properties Pepper has diuretic properties and kills bacteria. It promotes good digestion, fights constipation, nausea and osteoarthritis. Pepper also has a stimulating effect on the body.
